Bukhari Rice in Red

Ingredients

  • Primera red rice
  • Olive oil
  • Onion
  • Carrot
  • Chickpeas
  • Himalayan salt
  • Cinnamon powder
  • Bay leaf
  • Cumin powder
  • Cardamom
  • Black pepper
  • Nutmeg powder
  • Clove
  • Vegetable broth
  • Roasted peanut
  • Raisin
  • Coriander

Directions

  1. Heat up 3 tablespoons of olive oil.
  2. Add in 1 cup of onion and 1/4 teaspoon of Himalayan Salt.
  3. Stir fry until fragrant.
  4. Add in 1 cup of carrot.
  5. Stir fry to soften the carrot.
  6. Add in 1/2 teaspoon of cinnamon powder, 2 bay leaves, 1 teaspoon of cumin powder, 1 teaspoon of cardamom, 1/2 teaspoon of black pepper, 1/2 teaspoon of nutmeg powder and 1/4 teaspoon of clove.
  7. Mix well.
  8. Add in 1 cup of pre-cooked chickpeas and 1 cup of Primera red rice.
  9. Mix well.
  10. Add in 2.5 cups of vegetable broth.
  11. Mix well and bring to boil.
  12. Cover and cook for 40 minutes under low fire.
  13. Serve with roasted peanuts, raisin and coriander.
