Colourful Cabbages

Cabbages come in different colours such as purple and green from various regions around the world. It is also an abundant vegetable that can be found in our country. They are an excellent source of vitamin C, potassium, and fiber. Purple cabbage contains twice the amount of vitamin C that can be found in green cabbage while green cabbage contains twice as much folate than that in purple cabbage.

Savoy cabbage is well known for its high content of beta carotene, a compound that is converted to vitamin A by the body. On the other hand, bok choy (Chinese cabbage) is high is calcium content compared to the other types of cabbages. Cabbages are rich in bioflavonoids, monoterpenes, and indoles that help inhibit tumors. These chemicals also defend against unstable molecules, called free radicals, when the body uses oxygen.
