Curry Miso Red Noodle


  • 1 Piece Primera Red Rice Noodle
  • Cooking oil
  • 1 Medium Sized Onion (diced)
  • 4 Shiitake Mushroom (diced)
  • 1 Medium Sized Potato (diced 1 cm)
  • ½ Teaspoon of Sesame Oil
  • 800 Milliliters of Chicken Broth
  • 4 Tablespoons of Curry Powder
  • 5 Tablespoons of Coconut Milk
  • Red Miso
  • 1 Piece of Tofu (cut into cube)
  • Scallions


Cook Red Rice Noodle

  1. In a pot, bring water to boil.
  2. Boil the red rice noodle for approximately 3 minutes or until it is tender.

Cook Curry Miso

  1. Heat up some oil in a pot.
  2. Sauté diced onion until become translucent.
  3. Add in diced mushroom, diced potato and ½ teaspoon of sesame oil.
  4. Sauté until fragrant.
  5. Add in 800 milliliters of chicken broth, 4 tablespoons of curry powder.
  6. Mix well.
  7. Add in 5 tablespoons of coconut milk.
  8. Mix well and bring to boil.
  9. Scope up some curry broth with deep spatula and dissolve red miso (according to taste).
  10. Mix well.
  11. Add in tofu cube.
  12. Cook for 5 minutes.
  13. Pour the soup over pre-boiled red rice noodle.
  14. Garnish with sliced scallions and serve.
