Jamaican Fish with Coconut Sauce


  • Primera red rice
  • Fish fillets (salmon, dory, etc.)
  • Lemon
  • Mayonnaise
  • Coconut milk
  • Onion powder
  • Garlic powder
  • Ground cumin
  • Smoked paprika
  • Cinnamon powder
  • Chili powder
  • Himalayan salt
  • Organic sugar
  • Black pepper
  • Italian herbs
  • Shredded coconut


Cook red rice

  1. Wash 1 cup Primera red rice
  2. Drain the water completely
  3. Add in 2 cups water
  4. Cook as usual

Prepare seasoning

  1. In a clean bowl, add 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 2 teaspoons cinnamon powder, 1/4 teaspoon chili powder, 1/2 teaspoon Himalayan salt, 1/2 teaspoon black pepper and 1 teaspoon Italian herbs.
  2. Mix well.

Prepare fish for baking

  1. Place fish fillets on a baking tray.
  2. Spread mayonnaise over fish fillets and sprinkle with the seasoning prepared above.
  3. Flip over the fish fillets.
  4. Repeat spreading mayonnaise and sprinkle the seasoning over the fish fillets.
  5. Bake at 150°C for 15 minutes.

Prepare sauce

  1. Bring 200 mL coconut milk to boil.
  2. Add in 1 tablespoon organic sugar, 2 tablespoons grated lemon zest and 1/4 cup lemon juice.
  3. Mix well and reduce to half the original volume.


  1. Place the baked fish fillets on Primera red rice.
  2. Drizzle with the sauce.
  3. Sprinkle with shredded coconut.
  4. Serve.
