Ingredients
- Primera red rice
- Fish
- Red chili / Dried red chili
- Cabbage
- Long bean
- Cauliflower
- Shallot
- Shrimp paste
- Himalayan salt
- Tamarind pulp
- Fish sauce
- Palm sugar
Directions
Cook Primera Red Rice
- Wash 1 cup Primera red rice
- Drain the water completely
- Add in 2 cups water
- Cook as usual
Prepare Curry Paste
- In a clean blender, add red chili / dried red chili (to taste), 1 teaspoon of Himalayan salt, 2 tablespoons of shrimp paste and 1/2 cup of shallots.
- Blend to produce fine paste.
Prepare Kaeng Som Fish
- Bring 4 cups of water to boil.
- Add fish and cook for 5 minutes.
- Add all prepared curry paste, 2/3 cup of tamarind pulp, 4 tablespoons of fish sauce and 3 tablespoons of palm sugar.
- Mix well and cook for 10 minutes.
- Add desired amount of cabbage, long bean and cauliflower.
- Mix well and cook for 10 minutes.
- Serve.
