Manchester Stew with Red Rice

Ingredients

  • Primera red rice
  • Potatoes
  • Red kidney beans
  • Fresh mushrooms
  • Leeks
  • Carrot / baby carrots
  • Diced tomatoes (canned)
  • Onion
  • Garlic
  • Red grape juice / red wine
  • Dried oregano
  • Dried thyme
  • Himalayan salt
  • Pepper
  • Basil

Directions

Cook Primera Red Rice

  1. Wash 1 cup Primera red rice
  2. Drain the water completely
  3. Add in 2 cups water
  4. Cook as usual

Prepare Manchester Stew

  1. Sauté diced onion (2 medium-sized) and minced garlic (5 cloves) until fragrant.
  2. Add 1 cup of red grape juice or red wine and bring to boil.
  3. Add 1.5 cups of potatoes, 1 can of red kidney beans, 2 cups of fresh mushrooms, 2 medium-sized leeks, 1.5 carrots or baby carrots and 1 can of diced tomatoes.
  4. Mix well.
  5. Add 2.5 cups of water, 1/2 teaspoon Himalayan salt, 1/4 teaspoon pepper, 1 teaspoon dried thyme and 1 teaspoon oregano.
  6. Mix well, cover and cook for 1 hour.
  7. Serve with chopped basil leaf.
