Poke Bowl – Spicy Chicken & Tofu Garden

The Poke Bowl is a traditional Hawaii dish. The best part of it is that it can be customised to different tastes and variety of diets. These two varieties of the Poke Bowl prepared with the healthiest red rice (Primera Rice) from Malaysia’s market, with one for non-vegetarian and one for vegetarian.

Ingredients

  • Primera red rice | Primera beras merah | Primera红米
  • Water | Air | 水
  • Chicken meat | Daging ayam | 鸡肉
  • Chili flake | Serpihan cili | 辣椒片
  • Himalayan salt | Garam Himalaya | 喜马拉雅盐
  • Vinegar | Cuka | 醋
  • Soy sauce | Kicap | 酱油
  • Sesame oil | Minyak bijan | 芝麻油
  • Honey | Madu | 蜜糖

Directions

Cook red rice | Masak beras merah | 烹煮红米饭

  1. Wash 1 cup Primera red rice | Cuci 1 cawan Primera beras merah | 洗 1 杯Primera 红米
  2. Drain the water completely | Buangkan air sepenuhnya | 完全倒干
  3. Add in 2.5 cup water | Masukkan 2.5 cawan air | 加入 2.5 杯水
  4. Cook as usual | Masak seperti biasa | 如平时般烹煮

Marinate chicken | Peram Ayam | 腌制鸡肉

  1. Cut 2/3 cup of chicken meat into cube | Potong 2/3 cawan daging ayam ke dalam bentuk kubus | 将2/3杯鸡肉切块
  2. Add in 1/4 tsp chili flake, 1/4 tsp Himalayan salt, 1 tsp vinegar, 2 tsp soy sauce, 1/2 tsp sesame oil and 2 tsp honey | Masukkan 1/4 tsp serpihan cili, 1/4 tsp garam Himalaya, 1 tsp cuka, 2 tsp kicap, 1/2 tsp minyak bijan dan 2 tsp madu | 加入1/4茶匙辣椒片,1/4茶匙喜马拉雅盐,1茶匙醋,2茶匙酱油,1/2茶匙芝麻油和2茶匙蜜糖
  3. Mix well | Campurkan | 拌匀
  4. Marinate for 1/2 hour | Peram selama 1/2 jam | 腌1/2小时

Marinate tofu | Peram tauhu | 腌制豆腐

  1. Cut tofu into cube | Potong tauhu ke dalam bentuk kubus | 将豆腐切成方块
  2. Add in 1/4 tsp chili flake, 1/4 tsp Himalayan salt, 2 tsp soy sauce, 1 tsp vinegar, 1/2 tsp sesame oil and grated ginger and garlic | Masukkan 1/4 tsp serpihan cili, 1/4 tsp garam Himalaya, 2 tsp kicap, 1 tsp cuka, 1/2 tsp minyak bijan dan halia dan bawang putih parut | 加入1/4茶匙辣椒片,1/4茶匙喜马拉雅盐,2茶匙酱油,1茶匙醋,1/2茶匙芝麻油和姜末和蒜末
  3. Toss to mix | Campurkan | 拌匀
  4. Marinate for 1/2 hour | Peram selama 1/2 jam | 腌1/2小时

Preparing chicken and tofu

  1. Heat up 2 tbsp olive oil | Panaskan 2 tbsp minyak zaitun | 加热 2 汤匙橄榄油
  2. Sauté marinated chicken/tofu | Tumis daging ayam/tauhu peram | 炒香鸡肉/豆腐
  3. Turn off the fire | Tutupkan api | 关火

Serve | Hidangkan | 上座

  1. Add 1/2 cup of red rice in a bowl | Masukkan 1/2 cawan nasi merah dalam mangkuk | 在碗中加入1/2杯红米饭
  2. Arrange carrot, corn, onion, cucumber, pineapple, avocado and mango | Susunkan lobak merah, jagung, bawang, timun, nanas, alpukat dan mangga | 排上胡萝卜,玉米,洋葱,黄瓜,凤梨,鳄梨和芒果
  3. Arrange spicy chicken/tofu | Susunkan ayam pedas/tauhu | 排上辛辣鸡肉/豆腐
  4. Sprinkle with black sesame, green onion and nori | Taburkan dengan bijan hitam, bawang hijau dan nori | 撒上黑芝麻,葱和紫菜
