Red Cajun Jambalaya


  • Primera red rice
  • Olive oil
  • Chicken Sausage
  • Chicken meat (cube into cube)
  • Yellow onion
  • Garlic
  • Celery
  • Bell pepper
  • Green pepper
  • Cicken stock
  • Diced tomato
  • Cajun Seasoning
  • Thyme
  • Bay leaves
  • Okra
  • shrimp


  1. Sauté the 3 cups chicken sausage and 4 cups of chicken cube in olive oil.  Sauté until the chicken is cooked through and the sausage is lightly browned. Then transfer to a clean plate and set aside.
  2. Sauté the veggies.  Sauté ½ cup yellow onion, ¼ cup garlic, 1 cup celery, 1 cup bell pepper, ½ cup green pepper until fragrant.
  3. Add 1 cup of primera red rice, 2 cups of chicken stock, 2 cans of diced tomato, 1 tablespoon of Cajun seasoning, 1 tablespoon thyme, 2 pieces of bay leaf.  Give everything a good stir.
  4. Cover and cook.  Then cook for 45 minutes, stir the mixture every 5 to 8 minutes or so (to prevent burning) until the rice is nearly tender.
  5. Add the okra and shrimp.  And cook for a final 5 minutes or so, until the shrimp is pink and opaque.
  6.  Add the chicken and sausage back in. Mix well
  7. Serve warm.  Garnished with your desired toppings.
