Red Pumpkin Cake

Ingredients

  • Primera red rice powder
  • Tapioca flour
  • Cooking oil
  • Garlic
  • Shallot
  • Dried shrimp
  • Ground chicken meat
  • Frech shiitake mushroom
  • Radish pickle
  • Pumpkin
  • Himalayan salt
  • Organic sugar
  • White pepper
  • Spring onion
  • Red chili

Directions

Prepare watery batter

  1. Rinse 500 g Primera red rice and dry completely.
  2. Grind to obtain a fine red rice powder.
  3. In a mixing bowl, mix 350 g Primera red rice powder and 150 g tapioca flour.
  4. Add in 1 L water.
  5. Mix well.

Prepare pumpkin cake

  1. Heat up 5 tablespoons of cooking oil in a pan.
  2. Add in 2 tablespoons minced garlic and 2 tablespoons minced shallot.
  3. Stir fry till fragrant.
  4. Add in 1/2 cup dried shrimp.
  5. Stir fry till golden.
  6. Add in 3/4 cup of ground chicken meat, 4 chopped fresh shiitake mushrooms and 150 g minced radish pickle.
  7. Stir fry till fragrant.
  8. Add in 500 g of pre-steamed pumpkin cube, 1/2 tablespoon Himalayan salt, 1 teaspoon organic sugar and 1 teaspoon white pepper.
  9. Stir fry till fragrant.
  10. Pour in the prepared watery batter.
  11. Mix well.
  12. Cook over low heat with frequent stirring until the mixture turns into a thick paste.
  13. Oiled the steam plates / bowls.
  14. Transfer the paste to the oiled steam plates / bowls.
  15. Steam for approximately 40 minutes.
  16. Serve with spring onion and red chili.
