Primera Rice – 1/3 cup, uncooked
Water – 2/3 cup (to cook rice)
Chickpeas – 1 cup, canned, drained
Alfalfa sprouts – 1 cup
Caesar dressing – 1 tablespoon
- Firstly, cook Primera Rice. Once the rice and water mixture boils, turn down the heat to the lowest until the rice is cooked.
- While waiting for the rice to cook, blanch alfalfa sprouts. Plunge the sprouts into boiling water for 15 seconds. Immediately after that, plunge them into ice water for another 15 seconds. Then, use fork to separate the sprouts.
- Once the rice cools, mix it with chickpeas, followed by alfalfa sprouts.
- Drizzle Caesar dressing over the Primera Rice with Chickpea Salad and enjoy!
